I love a good steak. I love many good steaks. With that in mind, I figured going to a Brazilian steakhouse where you get a sample of several different cuts of meat would be a great, low carb meal—-I mean, they DO have a salad bar…

It came as a huge shock to see my glucose levels spike to 250, even with 4 units of fast acting insulin beforehand. Sure there were a couple (three) of small empanadas mixed in with the delicious cuts of meat, salad, cucumbers, and chimichurri…but how is it so high!? And for so long!? It took nearly 7 hours for my levels to stabilize, so I did a little research in the meantime.

It turns out that high fat meals like this one aren’t the best for people with type 1 diabetes. According to a study, “High fat meals are followed by delayed and prolonged hyperglycemia and higher glycated hemoglobin…high fat meals lead to postprandial pro-inflammatory responses through different mechanisms, including gut microbiota modifications.”

So it looks like today will be salads, anti-inflammatories, and working out to get everything back on track, but don’t let this hold you back from a rare treat…maybe hold the empanadas for a lower carb count.
