Whether it’s traveling to see family that lives around the Denver metro area or vacationing in Santa Fe, high altitude environments always see my glucose levels spiking for seemingly no reason.
At first I thought it was something in the food…”These people must love sugar, no way my meal should have caused that high of a spike!” I would repeat like a broken record.
It turns out the culprit is hydration. When you’re at a high altitude it’s important to drink water, even if you have been to the area enough times to not get altitude sickness; you’re still dehydrated so the concentration of glucose in your blood will be higher.
